Baked Coconut Donuts
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup shredded coconut
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup buttermilk
- 1/4 cup unsweetened coconut milk
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup powdered sugar for glaze
- 2 tbsp coconut milk for glaze
- 1/4 cup shredded coconut for topping
Instructions:
Grease a donut pan and preheat the oven to 350 degrees Fahrenheit 175 degrees Celsius
Mix the flour, sugar, coconut shreds, baking soda, baking powder, and salt in a big bowl
Combine the buttermilk, egg, coconut milk, vegetable oil, and vanilla extract in a separate bowl
Mixing until just combined, pour the wet ingredients into the dry ingredients
Pour the batter into each cavity of the greased donut pan, filling it to about two thirds full
Bake the donuts for 12 to 15 minutes, or until they bounce back when you touch them, in a preheated oven
In a small bowl, whisk together the powdered sugar and coconut milk to make the glaze while the donuts bake
After baking, take the donuts out of the oven and let cool in the pan for a few minutes before moving them to a wire rack to finish cooling
After allowing any excess glaze to fall off each cooled donut, dip it into it and top with shredded coconut
