Coffee-Rubbed Pork Tacos on Homemade Chocolate Corn Tortillas
Ingredients:
- 1 lb pork shoulder, thinly sliced
- 2 tbsp coffee grounds
- 1 tbsp cocoa powder
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups masa harina
- 2 tbsp cocoa powder
- 1 1/2 cups warm water
- 1/4 cup vegetable oil
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled queso fresco
- Lime wedges for garnish
Instructions:
Put the chili powder, cumin, paprika, salt, and pepper in a bowl
Add the coffee grounds and mix them together
Spread this on the sliced pork shoulder all over
For at least 30 minutes, let it sit
Mix the cocoa powder and masa harina in a different bowl
Knead the dough until it turns into a smooth mass as you slowly add warm water
Make small balls out of the dough and use a tortilla press or a rolling pin to flatten them into tortillas
On a medium-high heat, cook the chocolate corn tortillas for about two minutes on each side, until they are lightly browned and fully cooked
Keep them warm in a basket lined with towels
Put vegetable oil in a different pan and heat it over medium-high heat
Put in the pork slices that have been marinated
Cook for about 4 to 5 minutes on each side, until they are browned and fully cooked
Put a chocolate corn tortilla on a plate to start putting the tacos together
Add some pork that has been rubbed with coffee
Diced onions, tomatoes, cilantro, and queso fresco should be put on top
