Gluten-Free Quick Chili
This quick gluten-free chili is great for a cozy meal during the week. It's full of protein and flavor, and it will make you feel better when you want comfort food. It's also easy to make your own by adding your favorite toppings.
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 2 cups beef broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: avocado, cilantro, lime wedges
Instructions:
Over medium-low heat, brown the ground beef in a large pot until it is no longer pink
Peel and chop the onion and bell pepper into small pieces
Cook the vegetables until they get soft
Beef broth, chili powder, cumin, salt, and pepper should all be added slowly while stirring
Bring the chili to a low boil, then stir it every now and then for 20 to 25 minutes
If you need to, taste and change the seasonings
Serve hot with avocado, cilantro, and lime wedges as toppings if you want
