Slow Cooker Sour Cream & Chive Baked Potatoes
It's very simple to make these baked potatoes in the slow cooker, and they always turn out perfectly soft. Plush sour cream, gooey cheddar cheese, and fresh chives on top make them a filling and cozy meal.
Ingredients:
- 4 large russet potatoes, scrubbed and dried
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped chives
- Salt and pepper to taste
Instructions:
Pierce each potato several times with a fork
Wrap each potato in aluminum foil
Place wrapped potatoes in the slow cooker
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender
Once potatoes are cooked, carefully unwrap them
Slice each potato open and fluff the insides with a fork
Top each potato with a generous dollop of sour cream, shredded cheddar cheese, and chopped chives
Season with salt and pepper to taste
Serve hot and enjoy!
