Uova in Purgatorio
Uova in Purgatorio, also known as Eggs in Purgatory, is a delicious Italian dish featuring eggs poached in a spicy tomato sauce. It's a simple and satisfying breakfast or brunch option with a kick of heat from the red pepper flakes. This recipe is quick to prepare and bursting with flavor.
Ingredients:
- 4 large eggs
- 1 can 14 oz crushed tomatoes
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon red pepper flakes adjust to taste
- Salt and pepper to taste
- Fresh basil leaves for garnish
- Grated Parmesan cheese optional
Instructions:
Heat olive oil in a skillet over medium heat
Add chopped onions and saut until they become translucent
Stir in minced garlic and red pepper flakes, and cook for another minute or until fragrant
Pour in the crushed tomatoes and season with salt and pepper
Simmer the sauce for about 10-15 minutes, allowing it to thicken
Create small wells in the sauce for the eggs
Carefully crack one egg into each well
Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny
Garnish with fresh basil leaves and grated Parmesan cheese if desired
